Chef Vinny of The Neapolitan Gourmet makes chicken parmesan. Here's the recipe so you can try it at home!
1 lb sliced thin boneless chicken breasts
2 cups seasoned bread crumbs
2 eggs beaten
2 cups spaghetti sauce
1 lb. Fresh mozzarella sliced the same size for each piece of chicken
1/2 cup Extra Virgin Olive Oil
Dip each piece of chicken in egg and then bread crumbs to coat both sides
Heat oil in saute pan
Fry on med-low for 5-7 minutes each side until golden, reserve chicken to a platter
Add sauce to another large saute pan, and heat
Add chicken and top with mozzarella
Cover and heat on low until cheese melts
You may also bake in a pre-heated oven to warm the sauce and melt the cheese
