FORT MYERS, Fla. -- It's Wednesday and that means it's time to fire up the WINK kitchen. Here today showing us how to make a soy ginger grouper is Chef Jason from the newly remodeled Island View Restaurant in the Lani Kai.
Island View Soy Ginger Grouper
1 tablespoon garlic
1 teaspoon fresh ginger
1 teaspoon allspice
1 teaspoon ginger
1 teaspoon fresh cilantro
1 pinch of sea salt
table spoon of soy sauce
3oz Soybean oil
1/2oz of Olive oil
10oz Fresh Flordia Grouper or any Great fish filet you caught in our great waterways
8oz My Sweet Jasmine Rice
4oz fresh pineapple
4oz seasonal fresh vegetable
4oz Chicken Stock
tsb of fresh cilantro
1/2 lemon for garnish
2oz Vegetable oil
1oz rice wine vinegar unseasoned
Combine all marinate ingredients in a bowl and pour over fish.
Marinate fresh in a min of 4 hours in zip lock tight plastic bag
Cast Iron skillet smoking hot!! Object we are trying to carmelize the outside of the fish while keeping the center of the filet moist.
Cook Grouper for 3 min on one side. Carefully turn fish
add 4oz of fresh pineapple and char with fish.
Add chopped cilantro
juice of a lemon.
Serve over My sweet Jasmine rice
Garnish with Lemon and Rice wine vinaigrette.
Would recommend a dry chardonnay like Wente Morning Fog Goes for like 12 a bottle and your neighborhood grocery store.
