FORT MYERS, Fla. -- It's Wednesday and that means it's time to fire up the WINK kitchen.
Today showing us how to make broiled swordfish is Jose Gonzales from Fleming's Prime Steakhouse in Naples.
1 Ea. Swordfish steak
1 Tsp. Lime & garlic fry seasoning
2 seconds Pan Spray
1/2 cup Pearl couscous
9 ea. halves Grape tomatoes
1 ½ oz. Fennel cream
1 ea. Thyme
1. Season both sides of the swordfish with lime & garlic seasoning. Spray with pan spray then broil on each side about 2-3 minutes or until 140°.
2. Place the couscous at the top center of a hot medium oval plate. Place the sword fish offset on the couscous.
3. Ladle the fennel sauce over the right side of the fish and top with the blistered tomatoes. Garnish with a thyme sprig.
