Mussel's Bianco
12-15 mussels
1oz oil
1tsp minced garlic
4oz white wine
2tbls butter
2oz diced tomatoes
1tsp fresh chopped basil
1 lemon wedge
pinch of salt & pepper
chopped parsley for garnish
In medium skillet heat oil on medium heat, add mussels and garlic, saute for approx 1 minute. Deglaze pan  (turn up the heat high) add white wine, then butter, mix quickly.  Turn down heat to medium,  let simmer approx one minute then add tomatoes, basil,  lemon wedge, salt & pepper.  Cook additional minute while stirring.  Serve in large serving bowl, garnish with fresh parsley.
