The Neapolitan Gourmet 5415 Airport Road, Naples, FL

Sautéed Eggplant for 2

1 medium sized eggplant sliced ½ inch thick

½ cup EVOO

S & P to taste

Granulated Garlic

Grated Romano Cheese

Add eggplant to frying pan with EVOO on medium heat

Sprinkle with salt, pepper and granulated garlic

Cook 3-4 minutes

When tender and lightly browned, turn once

Remove from pan and drain on paper towel

Serve with Romano cheese

Suggestion: Cook favorite pasta and top with eggplant

Add marinara sauce and enjoy!
