It's time to fire up the WINK kitchen! Flemmings Steakhouse joined us this morning in the kitchen to show us how to make Seared Ahi Tuna.
Ahi - 4oz
Spicy tuna oil (recipe below) - 2 1/2 tsp.
Baby arugula - 1/4 oz.
Rice wine vinaigrette - 1 Tbsp.
Ginger, pickled - 1/2 oz.
Spicy mustard sauce - 1 tbsp
Micro greens - 1 pinch
Spicy Tuna Oil
Pomace oil - 1 1/4 cup
Tuna spice - 1 cup
1. Stir the spicy tuna oil well then roll the Ahi in the spice. Sear on a hot cast iron skillet on top of the broiler on all sides execept the ends. Remove from the skillet then cut into 10-12 1/8" wide slices. Tuna should be rare.
2. Combine vegetable salad, arugulaa and rice wine vinaigrette in a small mixing bowl and toss well. Stack the vegetables tall on the top right corner of a warm small rectangle plate. Place the pickled ginger on the bottom right corner of the plate.
3. Arrange the Ahi slices out in front of vegetables curving toward the bottom left side of the plate. Place the sauce in the middle of the plate above the tuna then with a serving spoon spread the sauce toward the bottom left side.
4. Place the micro greens on the top of the vegetables and resting on the Ahi.
