FORT MYERS-Fla.- Fleming's Steakhouse chef Ryan Mitchell shows us how to make Vegetable and Egg Strata with Shrimp.
1 Tbsp. Lightly salted butter
4 oz. Cooked vegetables
7 oz. Scrambled eggs
1 1/2 oz. Gruyere cheese
2 oz. Pico de Gallo
1/2 oz. Crumbled chevre cheese
2 ea. Shrimp Skewers
Melt butter in a small frittata teflon pan over medium high heat. Add the cooked vegetables and saute for about two minutes. Add the scrambled eggs and half of the gruyere cheese and cook for 1-1 1/2 minutes to set the mixture. Top with the remaining gruyere cheese and bake at 400 degrees for about four minutes or until the egg is totally set. Remove from oven and place egg strata ion the top right side of a plate. Top with the Pico de Gallo. Sprinkle the crumbled chevre cheese. Prepare the shrimp skewer and place them on the left side of the eggs.
