Tuna Montebello

8 oz. grouper fillet

3 oz. flour

2 oz. olive oil

1 oz. chopped garlic

1 tbsp dried Italian herb blend

3 oz. white wine

2 oz. roasted red peppers

2 oz. fresh spinach

2 oz. fresh mozzarella

2 oz. sliced mushrooms

Salt and pepper

Dredge grouper in flour and pan sear in the olive oil. Once seared on both sides
add remaining ingredients and sauté all together. Finish cooking on stove top or
place in heated oven for 5 minutes. Season with salt and pepper.
