Dynamite TNT Hawaiian Lehi with a Peanut Ginger Soy

 

Dynamite TNT crust

Ingredients
2cups                mayonnaise
1oz          tamari (gluten free soy sauce)
2tblsp                togorashi
1ea          scallion
2tblspn     siracha
¼tsp                 fish sauce
 
Method:
1.     Combine all ingredients and season to taste and use to crust fish before searing.

 

Peanut Ginger Soy
 
Ingredients
2ea          scallions
½bunch    cilantro
½ea                  red bell pepper
1cup                  peanut oil
2cups                tamari (gluten free soy sauce)
1½cups              rice wine vinegar
4oz          ginger juice
1tblspn               fish sauce 
 
Method:
1.     Micro dice the scallions, cilantro and bell pepper and place into a tempered container
2.    Heat peanut oil to smoking hot and pour over scallion, cilantro, and bell pepper
3.    Add remaining ingredients and stir.
4.    Cool and reserve for use.
