Let's Eat: New England Lobster Roll

Classic New England Lobster Roll
(lower fat mayo - 1 cup= 400 calories)
2 lbs. cooked lobster meat
3/4 cup low fat mayo
3/4 cup Greek yogurt, cucumber infused
1/2 cup chopped green onions
2 tbsp. chopped celery
2 tbsp. fresh lime juice
1/2 trp. salt
2-3 dashes of hot sauce
Combine all ingredients- serve on toasted New England roll or buttermilk
biscuit
(can be tossed with butter)
