2 medium zucchinis
1/2 lb ground beef
1/2 cup ricotta cheese
1/4 cup parmesano
1/4 cup bread crumbs
1 cup marinara
Saute ground beef until brown and strain, let cool, then mix in ricotta and parmesano cheese, add egg, continue to mix, season with salt & pepper.
Cut zucchini in half lengthwise, it should look like a canoe. Clean out seeds with a small spoon. Trim off the bottom of the zucchini so it lays flat.
Fill zucchini with mixture, cover with bread crumbs, bake @ 350 for 30 minutes or until zucchini is fork tender. Plate , cover with marinara and serve with mashed potatoes or your favorite starch
