FORT MYERS, Fla. It's Wednesday and that means it's time to fire up the WINK kitchen.
  Here today showing us how to make a dinner that everyone will love, is Chef Vinny  from the Neapolitan Gourmet in Naples.


Chicken Parmesan

1 lb of chicken breast cutlets

3 eggs beaten

½ cup flour

1½ cups Italian bread crumbs

¾ cup EVOO

¾ lb fresh mozzarella sliced thin (about 6 slices)

1 qt. of Neapolitan Gourmet’s sauce

Flour both sides of cutlets, dip in egg, then coat with bread crumbs

Saute’ on medium heat in fry pan about 5 minutes on each side

Reserve to baking pan

Add sauce to cover

Top with slice of mozzarella on each piece of chicken

Add a bit more sauce to top

Bake at 325 until cheese melts.

Serves 2-4 people
