FORT MYERS, Fla. It's Wednesday and that means it's time to fire up the WINK kitchen.
  Here today showing us how to make corn that will leave everyone wanting more is Greg Stamper from Lee Roy Selmon's.


Grilled corn on the cob with Cotija cheese

1 ea whole white sweet corn
2oz chipotle moyo
2 tbl grated cojija cheese

Step 1

1 Carefully peel back the corn husks
2 Remove and discard all the silk from each ear of corn
3 steam or boil the ears of corn and then cool
4 cool in ice water bath

Step 2

1 grill corn until desired amount of char has been attained
2 brush with chipotle mayo
3 sprinkle with cotija cheese

How to make chipotle mayo

Depending on how much spice you enjoy, different peppers
can be used for this application

1 roast the pepper over a flame until outer skin has charred
2 remove outer skin
Puree remaining pepper, with or without seeds depending
on how spicy you want it
3 add ½ cup mayo per pepper, on average you can use 1
pepper for 4 ears of corn
