  Here today showing us how to make vegetables that even your pickiest eater will eat is Vinny from the Neapolitan Gourmet in Naples.

Grilled Vegetables


1 Medium eggplant

1 Med. Zucchini

1 Large Yellow Squash

¼ cup EVOO

Salt and pepper to taste

Granulated Garlic

Slice vegetables ½” thickness

Brush EVOO on each slice, followed by salt, pepper and garlic

Place sliced veggies on medium flame grill that is brushed slightly with oil to prevent sticking

Turn until veggies are tender

Serves 3-4
