Greg Stamper from Lee Roy Selmon's shows us how to make the perfect side dish for any occasion.

24 hard boiled eggs
1 cup mayonnaise
2 tbls yellow  mustard
2 tbls red wine vinegar / or pickle juice
1 tbls parsley
½ tsp salt
½ tsp wht pepper

To boil eggs bring water to boil and add eggs for 15 min. then remove eggs and place into ice bath

1- cut peeled eggs in half lengthwise and neatly separate yolks into a separate bowl
2- smash yolks with a fork and add remaining ingredients
3- use a wire whip to blend all ingredients together
4- fill a pastry bag with ingredients to fill eggs
5- refrigerate till needed fill egg whites as necessary
