 FORT MYERS, Fla.  It's Wednesday and that means it's time to fire up the WINK kitchen.
 Here today showing us how to make Aunt Rosie's lemon chicken  is Vinny from the Neapolitan Gourmet.

Aunt Rosie’s Lemon Chicken Breaded Quarters


2- medium sized chicken quarters

1 cup fixed bread crumbs

½ cup evoo

Juice of ½ lemon

This can be prepared stove-top or in oven

Remove skin from chicken

Mix Evoo and Lemon in small bowl

Dip piece of chicken in oil and then bread crumbs, coat evenly

Place on greased shallow pan and bake at 325 Oven for 45min to hour

Chicken should be golden on the outside when done


Serves 2-3 people
