 Here today just in time for Christmas is Chef Ryan Mitchell from Flemings showing us how to make chocolate truffles.


Chocolate Truffles

Makes 45 truffles

Heavy Cream

Chocolate, Semi sweet, grated

Cocoa Powder

White Chocolate shavings

1. Place heavy cream in sauce pot on medium high heat for 5 minutes until light boil.
2. Place grated chocolate in a mixing bowl then strain the hot cream over the chocolate and blend
with a wire whip until smooth. Place into casserole dish and cool to 70 degrees within 2 hours
and 40 degrees within 4 hours.
3. Using a small scoop portion the truffles onto a butcher paper lined sheet pan. Place back into
the cooler until firm. Once firm roll into a ball then lightly toss half in the cocoa powder and half
in the white chocolate shavings.
4. Place truffles on serving dish and enjoy!!
