  Here today showing up how to make stuffed artichokes is Chef Vinny from The Neapolitan Gourmet in Naples.

 

THE NEAPOLITAN GOURMET

 5415 AIRPORT ROAD

NAPLES

STUFFED ARTICHOKES

2 FRESH ARTICHOKES TRIMMED AND CLEANED

3 C SEASONED BREAD CRUMBS

1 ½ CUP ROMANO CHEESE

2 CLOVES MINCED GARLIC

Fresh Parsley chopped

½ c extra virgin olive oil to be mixed with bread crumb prior to
stuffing artichokes

Use spoon to fill each leaf with bread crumbs

Put in large pot with ½ inch water so artichokes are just resting
in water.

Cover and steam for 1 1/2 hours on low heat checking
frequently to make sure they do not burn.

(Keep hot water near by to add to the bottom of the pot if
evaporates to prevent from burning)

Test with testing fork until tender in middle of artichoke

Serves 2-4 for appetizer
