 It's  Wednesday and here at Wink News it means only one thing - Let's Eat.
 Here today showing us how to make pork brasciole is Vinny and Uncle Mike from Neapolitan Gourmet in Naples.

Pork Brasciole Recipe

4 ½ lb slices of pork cutlets

4 slices mozzarella cheese

Filling

½ c plain bread crumbs

½ c grated Romano cheese

½ c grated Provolone Cheese

2 pieces chopped sun-dried tomatoes

6 sprigs Italian parsley chopped

2 medium cloves of minced garlic

2 TBS EVOO

Mix filling ingredients in bowl

Flatten each slice of meat and spread mixture on it

Add 1 slice of mozzarella, roll, than tie with skewer or use toothpicks

Saute in pan with EVOO turning, cooking for about 20 minutes on
medium heat.

You can also drop into spaghetti sauce raw to cook while your sauce is
cooking.
