Spiced Surf & Turf Satay: Filet mignon and jumbo shrimp with Asian spices and ponzu sauce.
Satay Recipe (1 Serving): 1 Teaspoon Asian Spice, 6 1 oz. cubes of Filet mignon, 3 Jumbo shrimp-peeled and deveined, 3 4" Bamboo skewers, 1 Tablespoon Vegetable oil, 2 oz. Ponzu sauce.
Method of Preparation: Using the skewers place one piece of filet then one shrimp followed by another piece of filet, repeat step for all three skewers. Place all skewers on a plate and season all sides with the Asian spice blend. Using a medium size saute pan place on stove to medium heat and add oil. Once hot, place skewers in pan and cook on each side for approximately two minutes. Remove from pan and serve accompanied with ponzu sauce for dipping.
Ponzu Sauce (4 Servings); 1/4 cup soy sauce, 1/4 cup rice vinegar, 1/4 cup water, 1/4 cup yuzu juice, 1/4 cup sugar
Method of Preparation: Place all ingredients into a small mixing bowl and mix well with a whisk, cool in refrigerator until ready for use.
Asian Spice (4 Servings): 4 whole anise stars, 12 whole cloves, 8 whole black peppercorns, 1/4 teaspoon ground cardamom, 1/2 teaspoon kosher salt.
Method of Preparation: In a dry pan, roast all whole spices on medium heat, until toasted and very aromatic. Once cooled, place all the spice ingredients into a coffee bean grinder until evenly grinded.
