Carrabba’s Garlic & Herb Crusted Chicken

Serves: 4


1 each Whole Roasting Chicken

2 tsp. & 1 Tbs. Fresh Basil, Rosemary, and Parsley (chopped fine together)

As needed Black Pepper

As needed Salt Pepper

40 each Whole Peeled Garlic Cloves

1 cup Extra Virgin Olive Oil

1 cup White Wine

2 cups Chicken Stock

2 tsp. Rosemary (Chopped Fine)

1 fl.oz. Lemon Juice

1 each Bay Leaf


1.Rub chicken with a little olive oil. Season chicken with salt, pepper and the tablespoon of the chopped herbs. Rub on all sides of the chicken.

2.Place chicken in a roasting pan and add the remaining ingredients. Roast in a 350° oven for approximately 45 minutes or until the thick part of the chicken is 165°. Remove the chicken and set aside.

3.Using a slotted cook’s spoon remove garlic cloves and place into a food processor or blender and puree.

4.Remove bay leaf. Place remaining ingredients into a food processor or blender and pulse until blended about 1 minute.

5.Place the chicken on a serving tray and pour the sauce over the chicken.
