KISSIMMEE, Fla. (AP) - Butchers, grab your knives.
    
Almost 90 professional meat cutters are headed to Kissimmee on Tuesday in an effort to be crowned "Meat Cutter of the Year."
    
The butchers are taking part in three regional competitions that will test their skills.
    
The winners then move onto semi-finals competitions on Wednesday.
    
The top eight competitors will return in April to Amelia Island for the final competition. The winner will get $20,000 and the title of "Meat Cutter of the Year."
    
The butchers are being judged on quality, yield and speed. The winner will be the cutter who yields the most steaks with the highest quality cut in the least amount of time.
    
The competition is being sponsored by the restaurant chain, Texas Roadhouse.
