NAPLES, Fla. – Super Bowl Sunday is not just a day to take in the big game and cheer on your favorite team but enjoy some of the best tailgate food with some friends and family. Dana Hillis, of Big Papa’s County Kitchen is a world champion barbecue expert and Grand Champion of the 2009 Super Bowl Tailgate Throwdown. Hillis woke up early with WINK News This Morning to share some of his favorite tailgate recipes, from chicken wings to burgers and a couple listed below. BBQ Pulled Pork Nachos: Ingredients: Tortilla chips, pulled pork, cheese, jalapenos and BBQ sauce. Directions: Place chips on baking sheet or pan, layer with already cooked pulled pork, top with shredded cheese & jalapenos. Bake for about 15 minutes or until cheese is melted, drizzle BBQ sauce over top and serve. Jalapeno Poppers: Ingredients: Jalapeno peppers and/or mild peppers, sausage, cream cheese, shredded cheese and BBQ sauce. Directions: Cut peppers in half and remove seeds, steam peppers to soften, saute sausage and cream cheese together, take sausage and cream cheese filling and place in each half pepper, place in baking sheet or pan and top with shredded cheese. Bake for about 15 minutes, drizzle with BBQ sauce and serve.
