FORT MYERS, Fla. – We’re firing up the Wink News Kitchen. Chef Chris Degenova from Jimmy P’s Charred in Naples joins us with a special Charred Wagyu Strip Steak recipe. Ingredients – (Serves 2) 2 Wagyu New York Strip Steaks 1 pound Asparagus 4 oz. Demi glacé Jimmy P’s Rub – To taste Kosher Salt – To taste Fresh Ground Pepper To taste 2 oz. Olive Oil Cooking Instructions: Pre- heat oven to 350 degrees. In a medium size sauté pan, heat half of the olive oil on medium high. Season both sides of steak with Kosher salt, fresh ground pepper and Jimmy P’s rub. Place in heated pan and start to sear steak. Sear both sides of steak until golden brown. Note: for rare or medium rare: Finish in pan. If you like yours a little more well-done: Place on a sheet pan and cook for additional time. Allow steak to rest for 3-5 minutes. In a small sauté pan, add remaining oil. Place oil on the stove top at medium high to sauté asparagus. Season with salt and pepper. Plate, serve, and enjoy!
