Let’s Eat: Firehouse breakfast quesadilla

FORT MYERS, Fla. – It’s Wednesday and that means it’s time to fire up the WINK kitchen.
Frank Messana and Carolyn Rambosk from North Collier Fire Rescue came to show us how to make a firehouse breakfast quesadilla.

Firehouse Breakfast Quesadilla Recipe:
Serves 6

18 Large Eggs (beaten)
Sharp Cheddar (shredded) 16 oz.
Ham Slices (diced) 16 oz.
1 Red Pepper (diced)
1 Large Onion (diced)
1 package Medium Tortillas
1 jar Salsa
1 pint Sour Cream
Non-Stick Spray

Spray a frying pan with non-stick cooking spray over medium heat. Place the tortilla in pan and cover with beaten eggs. Let the eggs begin to set and flip to brown eggs. Flip back over and place shredded cheese, diced ham, pepper, and onion on eggs. Use a spatula to fold the tortilla in half. Let it cook for a few more minutes to melt the cheese and warm the vegetables.

Put everything on a plate.
Garnish with salsa and sour cream.
